1. Raw Materials: Mustard Seeds from around the World
Yellow and brown mustard seeds are predominantly used for the production of mustard. These thrive in dry, continental climates – preferred growing areas are in Canada, Ukraine, and Eastern Europe. Ideal conditions for mustard cultivation can also be found in Austria, particularly in the Weinviertel region.
After harvesting, the seeds are dried, cleaned, and stored in silos. For further processing, they are transported to the production site in big bags.
2. Mixing and Preparation
Before grinding, the mustard seeds are sieved again to remove any remaining impurities. Depending on the desired end product, yellow and brown mustard seeds are mixed. This not only serves to adjust the level of spiciness but also to balance quality fluctuations between harvests.
Typical ingredients such as water, vinegar, salt, sugar, and spices are added to the mustard seeds. Then the actual production process begins – depending on the chosen method.
3. Grinding with Corundum Disc Mills
A central element in industrial mustard production is the grinding of mustard seeds into so-called mustard mash. Corundum disc mills are often used here – a particularly robust and low-maintenance technology characterized by high grinding fineness, temperature control, and longevity.
The mill consists of two counter-rotating corundum discs between which the mustard seeds are gently crushed and ground under a defined gap width. This process protects the delicate flavors and ensures a uniform consistency of the mustard paste – ideal for industrial processing.
4. Maturation: Developing Spiciness or Mildness
After grinding, the mustard mash is cooled down and matures at a controlled temperature. The duration of maturation varies depending on the desired end product.
5. Filling: Tube or Jar
After the maturation period, the mustard is filled either into tubes or jars, which are particularly popular for small batches and changing varieties.
6. Variety of Types
Whether it’s spicy tarragon mustard, mild Kremser mustard, English mustard, Dijon mustard, or creative varieties like honey mustard, onion mustard, or chili mustard – the range is extensive.
